Unfortunately, this preference has serious environmental consequences. Livestock farming accounts for 15% of global greenhouse gas emissions and is a major driver of deforestation and water pollution.

At Glimpse, we were thrilled to discover Chef Elijah, who curated an unforgettable vegan degustation at the Chef’s Table in the Emerald Room. This immersive experience featured a six-course meal that was nothing short of extraordinary, showcasing wild foraged and locally sourced ingredients, some even harvested from another Glimpse experience at Mark’s urban micro farm!

Elijah broke any preconceived notions that plant-based cuisine is limited or basic. From leek shanks with pepita miso to dandelion sundae with wattleseed ice magic, each dish was a masterful blend of creativity, innovation, and pure flavour that left our senses enchanted.
